Recipes Chinese Chicken Stir Fry

Though it isn’t very difficult or time consuming to make, Chinese chicken stir fry is a meal that is both filling and nutritious. It will wow company and the family. You need never mention how easy it was to make.

Ingredients:

1 pound boneless and skinless chicken, large diced and thawed
1 cup broccoli, diced
1 cup mushrooms, sliced
1/2 cup carrots, diced
1 medium onion, diced
1 can chow mein vegetables, drained
2 tablespoons soy sauce
2 tablespoons Worcestershire sauce
1 teaspoon rice or wine vinegar
2 tablespoons olive oil
1 teaspoon honey
3 tablespoons Chinese fermented black beans
1 tablespoon crushed garlic
1/2 teaspoon ground ginger
4 cups cooked rice

1. In a wok over high heat, brown the chicken in the olive oil, approximately 3 minutes cooking time.

2. Add the vegetables and mushrooms, stir, and cook for an additional 5 minutes, stirring frequently.

3. Reduce heat to medium and add remaining ingredients except rice. Cook an additional 15 minutes, stirring frequently.

Serve over a bed of the cooked rice.

For a taste change, baby corn, water chestnuts, sliced bamboo shoots or bean sprouts can be added with the rest of the vegetables when cooking. This meal can also be garnished with parsley or nasturtium blossoms for a good bit of edible color. White and brown rice each add a slightly different flavor, or the dish can be served over a bed of egg noodles.

As a tip, if you wish you can use corn starch to thicken the juices of this stir-fry, though many people prefer it just as it is.

This dish also goes great with egg rolls, cream of mushroom soup, or sweet batter fried zucchini slices. A green salad side dish can also be a good complement to this meal. Finger foods such as batter-fried shrimp are also a nice touch.

Note that salt is not needed in this recipe, since the soy sauce is already salty. Adding salt can make the dish overpoweringly salty.

Considering the flavor of this dish, few people will really believe that you spent less than a half hour preparing it. It also tastes so good that even fewer will believe that it is actually good for them. Yet this Chinese stir-fry chicken is also so filling that the above recipe will serve a family of four, possibly even more if there are side dishes such as those suggested above.

At the very least, it is worth giving it a try. Beware, though, this is going to be so popular that the family is going to ask you to make it over and over again. Go ahead and indulge them. Just don’t tell them how very easy it is to make.
